MUSHROOM STEAKS 
1 lb. mushrooms, sliced
4 whole eggs or 5 egg whites
1 (med.) onion, chopped fine
1 c. quick oats
2 tbsp. soy sauce
Salt and pepper
1/2 c. cottage cheese (optional) (adds protein)

In large mixing dish beat eggs or whites to mix well. Add all the ingredients. Mix well. Let stand 15 minutes.

Heat large fry pan hot. Use favorite oil, 2 tablespoons or enough to fry as a pancake. I like a spoon of butter, too. Shape like a (medium) pancake with a tablespoon. Brown on one side and turn and brown. Remove. Place on a paper towel. Serve hot with vegetable and salad.
