COCOA FUDGE 
2 c. granulated sugar
3 tbsp. cocoa
A pinch or two of salt
1/16 tsp. cream of tartar
3/4 c. milk
1 tbsp. butter
1 tsp. vanilla

Blend sugar, cocoa, salt, cream of tartar together. Add milk; then mix well, then place pan over low heat. Stir constantly until mixture reaches boiling point. Do not stir again. Boil slowly until soft ball stage is reached. Remove from the heat, add butter and vanilla. DO NOT STIR. Place pan in cold water. When candy no longer feels hot to your fingers, beat until it is creamy and begins to lose it's glaze. Turn out onto a buttered pan and mark into squares. Very, very good for the holidays.
