4 boned and skinless chicken breasts 1 can cream of chicken soup (Campbell's) 1 tsp. curry powder 1 tsp. lemon juice 1/2 c. mayonnaise (Hellmann's) 1 c. shredded cheddar cheese Sprinkle chicken breasts with salt, pepper and Accent. Brown in oil for 3-4 minutes each side. Drain on paper towel. Combine soup, curry powder, lemon juice, and mayonnaise to make a sauce. Place chicken breast in casserole (low sides). Add sauce over chicken. Sprinkle shredded cheddar on the top. Bake at 375 degrees for 45 minutes. Serve on cooked rice or cooked broccoli. I use minute rice or steamed broccoli. |
