CHILI RELLENOS CASSEROLE 
6 beaten eggs
3 c. cream-style cottage cheese
3/4 c. finely crushed Ritz crackers (18)
1 (4 oz.) can green chilies, chopped
3/4 c. shredded Cheddar cheese
3/4 c. shredded Monterey Jack cheese

Combine eggs, cottage cheese, crackers, chilies and half of the shredded cheese. Turn into a 10 x 6 x 2 inch baking dish. Bake at 350 degrees for 45 minutes or until set. Sprinkle with remaining cheeses. Bake 5 minutes more or until cheese melts. Let stand 5 minutes before serving. Makes 6 servings.
