RHUBARB-ORANGE RELISH 
2 lg. ribs of rhubarb (2 c.), cut into 1/2 inch pieces
2 oranges, fruit cut into 1/2 inch pieces
2 orange rinds, grated
1 lemon, rind grated, juiced
1 1/2 c. sugar
1/2 c. water

Combine all ingredients in a medium saucepan. Heat to boiling stirring occasionally, over medium high heat. Simmer on medium low heat, uncovered, stirring occasionally; until rhubarb is tender and relish is thickened, about 30 minutes. Serve at room temperature or chilled. Makes 3 cups.
