IRISH SODA BREAD | |
2 1/2 c. flour (5) 1 tsp. baking soda (2) 1 tsp. baking powder (2) 1/2 tsp. salt (1) 4 tbsp. sugar (8) 1/2 c. butter (1) 1 c. raisins 2 tsp. caraway seed (4) 3 tbsp. apple cider vinegar (6) 3/4 c. milk (1 1/2) Heat oven to 400. Sift flour with next 4 ingredients. Cut in butter with pastry blender until mixture resembles coarse cornmeal. Stir in raisins to caraway seeds. Mix together vinegar and milk. Make a well in center of flour mixture, add liquid all at once, stirring vigorously with a fork until dry ingredients are moistened. Turn out onto a lightly floured board. Knead gently 8-10 times. Shape into a round ball and place in greased 8 inch pan (pie). Brush top with milk. Bake at 400 for 15 minutes. Turn oven down to 375 for 30 minutes. Ingredients in parenthesis are for 2 loaves. |
