QUICK MICROWAVE COATED CHICKEN 
1/2 c. Bisquick
1 tsp. paprika
1/2 tsp. salt
1/8 tsp. pepper
8 chicken pieces, about 2 lb.

Mix Bisquick and spices in a bag. Shake chicken in bag until coated. Arrange chicken pieces, skin side up and thickest parts to outside, in a square microwave-able dish, 8 x 8 x 2 inches. Cover with waxed paper and microwave on high 10 minutes, rotate dish 1/2 turn. Microwave until done, 6-8 minutes longer.

Mexican style chicken: add 2 tablespoons yellow corn meal and 2 teaspoons chili powder to coating mixture.

Since microwave ovens vary in power, you may need to adjust your cooking time.
