COTLETS (Apple or Apricot) 
2 c. pulp (apple or apricot)
1/2 c. water
2 c. sugar, can be light brown
3 env. unflavored gelatin
1 c. chopped walnuts
1 tbsp. lemon juice
1/2 c. confectioners' sugar
1 tbsp. cornstarch
Apple mix takes 1/4 tsp. cinnamon to pulp, added with nuts

Core and pare apples. Cut into small pieces. (Or pit and cut apricots into small pieces.) Add 1/4 cup of water. Cook until tender and then put through food mill or sieve. Add sugar. Cook and stir over low heat until thick, about 1/2 hour. Soften gelatin in remaining 1/4 cup cold water and then add to hot apple/apricot mixture. Stir until dissolved. Chill until slightly thickened. Stir in walnuts and lemon juice. Pour into 8 inch square (buttered) pan to a depth of about 1/2 inch. Let stand 24 hours then chill. Cut into squares and roll in a mixture of confectioners' sugar and cornstarch. Freezes.
