OLD FASHIONED PEANUT BRITTLE | |
2 c. sugar 1 c.light corn syrup 1 c. water 2 c. raw peanuts (blanched) 1/4 tsp. salt 1 tsp. butter 1/4 tsp. baking soda Combine sugar, corn syrup, and water in heavy skillet. Cook slowly, stir until sugar dissolves. Cook to soft ball stage (238 degrees). Remove from heat while testing. Add nuts and salt to mixture. Cook to hard crack stage (290 degrees). Stir constantly. Remove form heat. add butter and soda; stir to blend. Mixture will bubble. Pour onto greased platters. cool partially by lifting around edges with spatula. Keep spatula moving under mixture so it won't stick. When firm, but still warm, turn over. Break into pieces when cool. |
