LENTIL - BARLEY STEW | |
1/4 c. butter 3/4 c. chopped celery 3/4 c. chopped onion 6 c. water 3/4 c. lentils 9-16 oz. can tomatoes 3/4 c. barley 2 tsp. salt 1/4 tsp. pepper 1/2 tsp. rosemary 1/2 tsp. garlic salt Saute celery and onion in large saucepan. Add the water and lentils; simmer 20 minutes. Add tomatoes, barley, and spices. Simmer 45-60 minutes. You may need to add a little water part way through. Serves 4-6. |
