SWEET POTATO CASSEROLE 
4 sweet potatoes
1 stick butter
1/2 c. brown sugar
2 eggs
1 c. evaporated milk
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract
1/2 c. pecans
3/4 c. mini marshmallows

TOPPING:

1 stick butter, melted
1/2 c. brown sugar
1 c. pecans
1/2 c. mini marshmallows

Beat potatoes with butter, eggs, milk. Blend in remaining ingredients and pour in casserole dish. Bake at 350 degrees for 25 to 30 minutes or microwave (high) for 6 minutes. Mix topping, spread over casserole, and return to oven for 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
