SHRIMP FRIED RICE 
1 sm. pkg. frozen shrimp (calabash style)
1 can bean sprouts, drained
1 med. onion, chopped
2 eggs, scrambled
4 c. rice, cooked
Olive oil
butter
Soy sauce

Saute onions, bean sprouts and shrimp in 2 tablespoons olive oil and 2 tablespoons butter until onions are tender. Stir-fry rice in 3 tablespoons butter for 3 minutes. Add shrimp, bean sprouts, onions and eggs, and stir fry for 2 minutes. Add soy sauce, and salt and pepper to taste.

Can use wok or large frying pan.
