FLANK STEAK ROULADE 
2 flank steaks, totalling 3 lbs.
10 oz. pkg. chopped spinach, thawed & well drained
4 oz. cream cheese (room temperature)
1/4 c. fresh Parmesan cheese, grated
1/4 tsp. cayenne pepper
1/4 tsp. nutmeg
2 eggs, beaten

Pound steaks with meat mallet. Tenderize with Adolf's and Accent and set aside.

Combine remaining ingredients and mix well. Spread on steaks. Roll steaks lengthwise. Secure with toothpicks. Place in pan. Cover pan with foil. Bake in oven 50 minutes at 375 degrees. Uncover and bake an additional 15 minutes. Slice and serve with horseradish sauce.
