OATMEAL MUFFINS 
1 c. quick cooking rolled oats
1 c. buttermilk
1 lg. well beaten egg
1/2 c. packed brown sugar
1 c. flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1/3 c. melted shortening

Soak rolled oats in buttermilk for one hour. Then beat in egg. Stir in brown sugar.

Sift together flour, salt, baking powder and soda. Stir into oatmeal mixture, then stir in shortening. Spoon into greased muffin pans (about 2/3 full). Bake at 400 degrees for about 20 minutes. Makes 12 medium or 26 small muffins.
