QUICK AND EASY ROLLS 
2 1/2 c. all-purpose flour
2 pkgs. instant blend dry yeast
1/2 c. sugar
1 tbsp. salt (optional)
2 c. milk
1/4 c. cooking oil
2 eggs
3 1/2 c. all-purpose flour

Combine 2 1/2 cups flour, yeast, sugar, and salt in large mixing bowl. Heat milk and oil in saucepan over low heat until very hot or in microwave. Combine in flour mixture. Add eggs and mix well. Blend at low speed until moistened. Stir in additional 3 to 3 1/2 cups flour to form a sticky dough. Add 1/2 to 1 1/2 cups more flour as needed, kneading, working until dough is pliable and not sticky. Place dough in greased bowl; cover and let rise to double in size. Punch fist in dough several times to remove all air bubbles. Roll on floured surface. Cut for rolls or shape onto loaves. Place in greased pan and let rise to double in size. Bake at 350 degrees until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
