We usually eat it with tostadas (tortillas) or crackers what ever fits you best! This recipe has been in our family for years from Mexico to here! 3 lb. catfish fillets limes (amount is optional due to persons taste) 1 cup Clamato (clam/tomato juice) 2-3 cucumbers 1/4 cup cilantro 1 onion 3-4 tomatoes 1 tsp. salt Dice catfish into small pieces and put in a bowl to marinate with lime juice for about 1 to 1 1/2 hours in the refrigerator. Second add 1 cup of Clamato juice to the fish to marinate for about 30 minutes to add some flavor. Third dice cucumbers, cilantro, onion and tomatoes into very small pieces. Add to the fish mix and mix it for flavor and let it sit again for about 30 minutes to an hour so the flavors can incorporate. Note: This is for a big serving size, if you want less just reduce the amount of ingredients to half or one third. We use this recipe for family gatherings.
