COCONUT BREAD 
1 lb. flour
4 oz. butter or lard in both parts
3/4 c. milk & coconut water
6 oz. sugar
1 sm. grated coconut
1 tsp. vanilla essence
3 tsp. baking powder
6 oz. raisins (opt.)
1/2 tsp. salt
1 egg

Sift dry ingredients. Add sugar, then beat egg with milk, melted butter and essence. Stir in grated coconut, raisins (floured if used). Blend ingredients well. Knead slightly on a floured board. Shape into a loaf and place in a greased loaf pan 2/3 full. Dust with fine sugar. Bake in a moderate oven. The above ingredients will make 2 loaves.

For heavier coconut bread, use only 1 teaspoon baking powder and 1/2 cup milk. Knead well on board using extra flour until dough is very firm. Shape into loaves. Score the tops and brush with sugars and water.
