SWEET AND SOUR CHICKEN 
2-3 lb. fryers, cut up and skinned
1 (10 oz.) jar apricot preserves
1 (8 oz.) bottle Italian salad dressing
1 pkg. onion soup mix

Arrange chicken pieces in one layer in large open roasting pan. In medium bowl mix preserves, dressing, and soup mix. Pour over chicken pieces. Bake at 350 degrees for 1 1/4 hours, basting with sauce. While chicken bakes, prepare rice - 2 cups regular long grain. To serve, arrange chicken on platter. Skim fat from sauce in pan. Serve chicken with sauce and rice - 8 servings.
