MARYLAND FRIED CHICKEN 
2 1/2 lbs. broiler chicken (cut up)
1/2 c. flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper
2 eggs
2 tbsp. water
2 c. cracker crumbs or plain bread crumbs
Vegetable oil

Mix flour, salt, paprika and pepper in bag. Coat chicken with flour mixture. Blend eggs and water, dip chicken, coat with crumbs. Use skillet to fry chicken in vegetable oil until light brown. Cover and reduce heat to simmer, until chicken is tender. Remove cover for 5 minutes to crisp.
