BEEF STEW 
2 lbs. beef chuck, cut into 1 to 2 inch cubes
1 tsp. salt
1/8 tsp. pepper
1 lg. onion, cut into 1/8 inch slices
4 carrots, split lengthwise and cut into 4 inch strips
1 tsp. leaf basil
1/3 c. quick cooking tapioca
1 c. (4 oz.) sliced mushrooms, undrained (or fresh can be used)
1 tsp. Kitchen Bouquet or Worcestershire sauce
2 c. tomato soup
1 c. beef broth or water
2 potatoes, cut in 1/4 inch slices

Put all ingredients, except potatoes, in a Dutch oven. Mix together. Cover and cook in 300 degree oven 2 1/2 hours. Add potatoes and cook 1 hour longer. Serves 8.
