CHICKEN CORDON BLEU | |
4 whole chicken breasts, boned & skinned 8 sliced ham, cooked 8 sliced Swiss cheese 1/4 tsp. pepper 1 egg, beaten 1/2 c. Italian bread crumbs 1/4 c. butter 1 can Campbell's mushroom soup 1 (8 oz.) carton sour cream 1 (4 oz.) can sliced mushrooms, drained Place chicken breast half on sheet of waxed paper; flatten to approximately 1/4 inch thickness. Use a meat mallet or rolling pin. Place one slice of cheese and ham in the center of each breast. Sprinkle with pepper. Roll each breast up lengthwise and secure with toothpicks. Dip in egg and coat with bread crumbs. Melt butter in skillet and brown chicken on all sides. Place chicken in 12 x 8 x 2 inch baking dish. Add soup and sour cream to drippings in skillet and stir well. Pour sauce over chicken; bake uncovered for 40 to 45 minutes. Bake at 350 degrees. |
