RHUBARB PIE 
3 c. rhubarb, diced
3 egg yolks, beaten
2 tbsp. flour
2 c. sugar
1 c. sweet cream
1/4 c. orange juice

Pour into unbaked pie shell. Bake at 450 degrees for 15 minutes. Then reduce heat to 350 degrees for 30 minutes or more.

OPTIONAL MERINGUE:

3 egg whites
6 tbsp. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/4 tsp. cream of tartar

Combine all ingredients, except sugar, and beat until stiff foam. Add sugar, 1 tablespoon at a time, continuing to beat. Put on pie and bake at 350 degrees for 12 minutes.
