1-2 pt. fresh raspberries or strawberries
1 env. unflavored gelatin
1/2 c. sugar
1 1/4 c. boiling water
1 tsp. grated lemon peel
1/4 c. lemon juice
2 egg whites

Mix gelatin and sugar together in a medium bowl. Add boiling water and stir until gelatin is dissolved. Stir in lemon peel and juice. Chill in freezer about 1/2 hour until mixture is lumpy.

Place mixture in large bowl, add unbeaten egg whites. Beat at high speed until mixture is light and fluffy, about 7-10 minutes. Chill until set. Serve with fruit.
