SWEET POTATO PIE 
2 c. cooked, mashed sweet potatoes
1/2 c. softened butter
2 eggs, separated
1 1/4 c. sugar, divided
1/4 tsp. salt
1/2 c. milk
1/2 tsp. ground ginger
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 unbaked 8" pie shell

Combine sweet potatoes, butter, egg yolks, 1 cup sugar, salt and spices; mix well. Add milk and blend. Beat egg whites until foamy. Gradually add 1/4 cup sugar, beating until stiff. Fold egg whites into potato mixture. Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then at 350 degrees for 30 minutes. Serve with whipped cream if desired. Serves 8.
