SPINACH-STUFFED ONIONS 
4 med. onions
1 lb. fresh spinach, stems removed
2 tbsp. melted butter
1/4 c. half and half
Grated Parmesan or Swiss cheese

Peel onions and cut in half horizontally. Steam about 12 minutes or until tender but not mushy. Cool; remove center of onion and slice. Leave shells intact.

Wash spinach and cook 1 minute using only water that clings to leaves. Drain and chop. Saute spinach and diced onion in butter and cream until fairly dry. Season with salt and pepper.

Fill onion shells with spinach mixture; sprinkle with cheese. Bake in greased shallow pan at 350 degrees until thoroughly heated.
