SICILIAN MEAT ROLL 
2 beaten eggs
3/4 c. soft bread crumbs
1/2 c. tomato juice
1/2 tsp. dried oregano, crushed
1 sm. clove garlic, minced
2 lbs. lean ground beef
8 thin slices boiled ham
1 1/2 c. (6 oz.) shredded Mozzarella cheese
3 slices Mozzarella cheese

Combine first 6 ingredients, 1/4 teaspoon salt and 1/4 teaspoon pepper. Add beef and mix well.

On foil, pat meat to 12x10 inch rectangle. Arrange ham on top. Top with shredded cheese. Starting from short end, carefully roll up meat, using foil to lift. Seal edges and ends.

Place seam side down in 13x9x2 inch baking pan. Bake at 350 degree oven for 1 1/4 hours. Center will be pink. Halve cheese diagonally; place atop roll. Return to oven until melted. 8 servings.
