1 c. sugar
3 tbsp. flour
1 tsp. salt
1/4 c. cocoa
1 tsp. vanilla
3 egg yolks
1/2 stick butter
2 c. milk

Mix sugar, flour, salt and cocoa. Add a little cold milk to mix.

Scald or warm remainder of milk and pour into sugar mixture and cook until thick. Separate eggs. Add yolks through strainer and cook several minutes. Add butter, then vanilla. Pour into pie shell and add whipped egg whites to top. Brown in 375°F oven until peaks are toasted.

Egg Whites (Meringue):

3 egg whites
3 tbsp. sugar
pinch of salt
bottle cap vanilla

Beat whites until soft peaks form. Add sugar, salt and vanilla. Beat until stiff peaks form.
