FRENCH FRIED ONIONS 
4 lg. Bermuda onions
1/2 c. milk
1/2 c. flour
1 tsp. melted shortening
1/2 tsp. salt
1 egg yolk

Cut onions across into slices about 1/4 inch thick. Separate the slices into rings. Dip the rings into a thin batter made from milk, flour, melted shortening, salt and egg yolk.

Place in a frying basket and fry in hot shortening at 360 degrees to 370 degrees until delicately browned; drain. Salt lightly before serving. If preferred, onion slices may be simply dipped in milk and dredged with flour instead of coated with batter. Serves 8.
