CINNAMON CORN 
2 c. sugar
1/2 c. white corn syrup
1 c. butter
1 tsp. salt
Red food coloring
1 tsp. baking soda
1 tsp. cinnamon oil
8 qts. popcorn, popped

Cinnamon oil is sold with candy-making supplies.

Pop corn and place in large container. Mix sugar, syrup, butter, and salt in saucepan. Heat until mixture boils. Boil 5 minutes or until candy thermometer reaches 248 degrees (firm ball stage). Add few drops of red food coloring, soda, and cinnamon oil. (Stand back from pan when adding oil - it can burn your face.) Quickly pour syrup over popcorn; stir to mix. Spread in flat pans and bake at 200 degrees for 1 hour. Stir every 15 minutes while in oven.
