COUNTRY FRIED SQUASH 
2 c. yellow squash, finely chopped
1 c. onion, finely chopped
1 egg, beaten
1 tsp. salt
1 tsp. pepper
1/4 c. + 1 tbsp. all-purpose flour
Vegetable oil

Combine squash, onion, egg, salt and pepper. Stir in flour. Pour enough vegetable oil into a large skillet for the oil to be 1 1/2 inches deep. Heat the oil to a temperature of 320 degrees. Drop the squash mixture by tablespoonfuls into the oil. Cook until browned, turning once. Drain and serve hot.
