SQUASH FRY WITH CORN AND
SUNFLOWER SEEDS
 
2 tbsp. olive oil
2 lg. zucchini, cut into rounds
1 sm. jalapeno, cut into thin rounds, seed removed (if desired)
1 med. garlic clove, peeled & minced
1/4 tsp. dried oregano, crushed
1/4 tsp. salt
Freshly ground black pepper, to taste
1/2 c. fresh or frozen corn kernels, defrosted
1 tbsp. sunflower seeds
2 tbsp. Sharp Cheddar cheese, grated (optional)

Heat olive oil in a heavy skillet over medium heat until hot. Add zucchini and jalapeno. Fry until zucchini begins to brown, 2-3 minutes. Add garlic, oregano, salt, a few grindings of pepper and corn. Fry 2 minutes. Stir in sunflower seeds and garnish with cheese. Makes 4 servings. Note: Before adding the jalapeno, taste for hotness and add less if desired.
