PEPPER STEAK 
1 1/2 lbs. round steak
4 tbsp. vegetable oil
2 lg. tomatoes, peeled and coarsely chopped
4 med. sized green peppers, thinly sliced
4 tbsp. soy sauce
1/2 tsp. sugar
1/2 tsp. garlic salt
1/2 tsp. pepper
1/2 tsp. ground ginger
2 tbsp. cornstarch
1 c. beef consomme
Hot cooked rice

Partially freeze steak; slice across grain into 2 x 1/4 inch strips. Cook steak in oil in a large skillet until brown. Stir in tomato, green pepper, soy sauce, sugar, garlic salt, pepper and ginger. Cover and simmer 15 minutes.

Combine cornstarch and consomme; stir into steak mixture. Cover and simmer 30 minutes, stirring occasionally. Serve over hot rice.
