EMILY'S FAMOUS BUTTERMILK
BROWNIES
 
1 cup (2 sticks) butter
1 cup water
1/3 cup cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1 tsp. baking soda
1/2 tsp. salt
1/2 cup buttermilk
2 eggs, slightly beaten
1 1/2 tsp. vanilla extract

In a medium sauce pan, combine butter, water, and cocoa. Cook and stir consistently until the mixture comes to a boil. Remove from heat, and set aside.

In a bowl stir together flour, sugar, baking soda and salt. Add buttermilk, eggs and vanilla; beat until smooth. Stir batter into hot cocoa mixture. Beat until well combined.

Pour into greased 15x10-inch floured pan and bake for 400°F for 20 minutes. While brownies are warm, pour Buttermilk Chocolate Frosting on top, and spread evenly.

Buttermilk Chocolate Frosting:

4 tbsp. (1/2 stick) butter
1/2 cup cocoa powder
1/4 cup buttermilk
1 tsp. vanilla
2 1/4 cups sifted confectioners' sugar

In a saucepan combine butter, cocoa, and buttermilk. Bring to a boil; remove from heat. Stir in vanilla and confectioners' sugar. Immediately pour over warm brownies, spreading to edges.

Makes 2 dozen brownies.
