CRISP LEMON THINS 
1/2 c. butter
3/4 c. brown sugar
1 egg
3/4 c. flour
1/2 c. chopped almonds
1/4 c. rolled oats
1 tbsp. lemon rind
1/2 tsp. lemon extract

Cream butter. Gradually add brown sugar and egg. Stir in flour. Add almonds, rolled oats, lemon rind and lemon extract. Drop by a scant teaspoonful on greased cookie sheet. Bake at 350 degrees for 7-10 minutes or until edges are brown. Remove from cookie sheet immediately.
