FLOUNDER BORDELAISE | |
1 lb. fillet of flounder, frozen 2 tbsp. butter 1 clove garlic 1/2 sm. onion, finely diced 1 c. canned tomatoes, drained and chopped 1/2 c. red cooking wine 1 tbsp. minced parsley Pinch ground thyme 1/2 tsp. salt 1/4 tsp. black pepper 1/2 c. fresh bread crumbs Cut slightly thawed fish into 1 inch slices. Heat butter in large skillet. Saute onion and garlic for 1 minute. Remove garlic and discard. Add remaining ingredients, except bread crumbs. Simmer, uncovered, until fish flakes, about 5 minutes. Stir in crumbs. Serve with a side dish of rice or thin spaghetti seasoned with butter, Parmesan cheese, and some of the fish sauce. |
