SPINACH TARTS 
3 (10 oz.) pkg. frozen spinach, chopped
1 sm. onion, minced
2 tbsp. butter
3 egg yolks
3/4 c. light cream
Salt and pepper
Nutmeg, pinch
3 tbsp. grated Parmesan cheese

Cook spinach and drain thoroughly. Saute onions in butter until transparent.

Mix egg yolks and cream. Season with salt, pepper, pinch nutmeg and Parmesan cheese. Mix in spinach and onion. Place in 2 quart casserole. May then be refrigerated or frozen. Bring to room temperature and bake at 350 degrees for 15 minutes. Serves 6 to 8.
