CREAM OF POTATO SOUP 
1 qt. chicken broth
1 c. chopped celery
3/4 c. chopped onion
2 1/2 c. potatoes
20 oz. mixed vegetables
1 can cream of mushroom soup
1 lb. Velveeta cheese

Cook in Dutch oven until tender, about 20 minutes; add Velveeta cheese, sliced.
