THANKSGIVING CAKE 
2 c. pumpkin
2 c. sugar
4 eggs
1 tsp. salt
2 c. flour
1 c. vegetable oil
1 tsp. cinnamon
2 tsp. baking soda

Sift flour, salt, cinnamon and soda together. Set aside. Mix eggs and sugar, beating well. Add oil and beat well. Add dry ingredients and mix well. Blend in pumpkin. Bake in tube pan on 350 degrees for 1 hour.

ICING:

1 box powdered sugar
1 stick butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla or lemon extract

Cream butter and cream cheese until smooth. Add sugar, flavoring. Beat until smooth. Spread on cool cake.
