JAPANESE FRUITCAKE 
3 sticks butter
3 c. cake flour plus dash of salt and 1/2 tsp. baking powder
3 c. sugar
6 eggs
1 tbsp. vanilla flavor

Cream butter and sugar. Add eggs two at a time. Add flour along with flavor. Take out and set aside 1 big spoon of batter to 2 layer pans. To the rest of batter add: 1 tsp. nutmeg 1 tsp. allspice 1 tsp. ginger 1 tsp. mace 1 tsp. cloves 1 c. chopped nuts 1/2 tsp. vanilla flavor

Mix with spoon. This should make 2 more layers. Bake at 450 degrees.

FILLING:

Grated rind and juice of 3 lemons, 3 packs of frozen coconut, 1 cup sugar. Cook coconut, rind and juice and sugar until coconut is done. Then add cake batter and 1/2 tsp. vanilla flavor. Layer cake by using plain layer, then mixed layers.
