RICE STUFFING 
1 lb. chopped meat
1 (7 oz.) box Minute rice
1 onion, chopped
5 or 6 stalks celery, chopped
1 (8 oz.) jar sliced mushrooms
1 jar brown gravy

Brown 1 pound chopped meat. Drain the excess. Put in a dish. In a frying pan, put a little bit of oil, salt, pepper, and parsley. Add chopped onions and celery. Saute a while. Add sliced mushrooms, drain the juice. Brown very lightly. Break up the chopped meat and add. Saute a minute.

In a large bowl, put the rice and add everything from the pan also. Sprinkle some Parmesan cheese. Take 2 eggs and beat them. Mix over everything well. Taste to see if you need more spices. Put in baking pan. Bake at 350 degrees until nice and hot, approximately 1/2 hour. Add brown gravy.
