SWEET POTATO PUFF 
1 (40 oz.) can sweet potatoes or yams
4 tbsp. butter
1/4 c. milk
2 tsp. grated orange rind
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. chopped nuts
1 tbsp. butter

Heat sweet potatoes and liquid in medium saucepan until heated through. Drain potatoes and mash well. Add remaining ingredients (except nuts) and mix well. Turn into a greased casserole. Top with nuts and dot with 1 tablespoon butter. Bake uncovered in 325 degree oven for 30 minutes or until heated through.
