ROCKY ROQUEFORT DIP 
1/2 c. Ricotta cheese
4 oz. Roquefort, crumbled
1/2 c. sour cream
1/2 c. walnuts, chopped
3 med. scallions, minced
Juice of 2 lemons
1/4 tsp. cayenne pepper
Salt to taste
3 heads of Belgian endive
3 Red Delicious apples, sliced

In processor, combine the first three ingredients and process until smooth. Add the walnuts and process until blended. Transfer to medium size bowl, stir in scallions, lemon juice, pepper and salt. Cover and refrigerate until ready to serve. Pears are also a delicious fruit to serve with this dip.
