CHOP SUEY 
1 1/4 lb. hamburger
1 lg. onion, chopped
2 1/2 tsp. salt
1/4 tsp. pepper
2 c. chopped celery
1 green pepper, cut in lg. pieces
1 1/2 c. water
1/2 c. sliced water chestnuts (canned)
1/2 c. bamboo shoots (canned)
1 c. (1 lb. 12 oz.) bean sprouts, drained
1 jar sliced mushrooms or 1/2 lb. fresh sliced sauteed with hamburger

THICKENING:

3 tbsp. cold water
3 tbsp. cornstarch
1 1/2 tbsp. soy sauce
1 1/2 tsp. sugar
1 tbsp. brown gravy sauce

Cook beef and onion (mushrooms, if fresh) in large fry pan until lightly brown. Add salt, pepper, celery, peppers and water. Bring to a boil. Cover. Simmer 15 minutes. Thicken at this point with combined thickening ingredients. Add remaining vegetables. Heat until hot. Serve with rice or noodles.
