FRIED ZUCCHINI CAKES 
1/3 c. buttermilk baking mix
1/4 c. sharp Cheddar cheese
Salt and pepper to taste
2 lightly beaten eggs
2 c. coarsely grated zucchini
2 tbsp. butter

Mix baking mix, cheese, salt and pepper in bowl. Stir in eggs, fold in zucchini. Melt butter in 10-inch skillet, drop batter by tablespoons and fry on each side until brown.
