RHUBARB CUSTARD PIE 
1 lg. pie crust or 2 sm.
2 c. fine cut rhubarb
1 1/2 c. sugar
2 lg. eggs
3/4 c. half and half
2 tbsp. flour
1 tsp. vanilla
1/2 tsp. cinnamon
Pinch of salt

Put rhubarb in shell. Beat egg, sugar, flour, vanilla, salt and cinnamon until foamy. Add half and half. Pour over rhubarb. Bake in 400 degree oven for 10 minutes, then 340 degrees for 25 minutes. Very good! More cinnamon may be sprinkled on top.
