POPPY SEED MUFFINS 
1 1/2 c. sugar
1/2 c. soft butter
1 tsp. grated orange or lemon peel
4 eggs
4 c. flour
5 tsp. baking powder
1 tsp. salt
1/2 tsp. nutmeg
2 c. milk
1 c. golden raisins, optional
1 c. pecans, optional
10 tbsp. poppy seeds

Cream sugar, butter and peel. Add eggs, one at a time, beating well after each. Combine flour, baking powder, salt and nutmeg. Add to creamed mixture alternately with milk, beating well after each addition. Fold in remaining ingredients. Spoon into greased muffin tins, 3/4 full. Bake at 400 degrees for 20 minutes.
