GAZPACHO 
3 lg. tomatoes, peeled & chopped
1 green pepper, chopped
1 cucumber, peeled & chopped
1 c. chopped celery
1/2 c. chopped green onion
4 c. tomato juice
2 avocados, chopped
5 tbsp. red wine vinegar
1/2 tsp. pepper
2 tsp. salt
4 tbsp. olive oil

Be sure all vegetables are very finely chopped. Combine all ingredients in large non-metallic bowl and chill overnight. Serve cold with a dollop of sour cream on top of each serving.
