SIMPLE TURNIP GREENS 
4 1/2 lb. (about) fresh turnip greens, washed
1 lb. salt pork or smoked shoulder
3 qt water
1/4 tsp ground pepper
2 tsp sugar

Remove and discard stems and discolored spots from turnip greens. Tear into pieces, and set aside.

Slice salt pork at 1/4 inch intervals, cutting to but not through, the skin. Combine pork, sugar and water in a Dutch oven or large pan, bring to a boil. Cover, reduce heat and simmer for 1 hour. Add greens, and cook, uncovered, 30 to 35 minutes or until tender.
