“SNICKERDOODLES” IS IN:

SNICKERDOODLES 
2 eggs
2/3 cup oil
2 tsp. vanilla
3/4 cup sugar
2 cups all-purpose flour, sifted
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon or 2 tsp. grated lemon rind
1/2 cup sugar, for rolling

Heat oven to 400°F.

Beat eggs with fork, stir in oil, vanilla and lemon rind (if using). Blend in 3/4 cup sugar until mixture thickens.

Blend flour, baking powder, and salt; add to mixture.

Roll into 1-inch balls. Mix 1/2 cup sugar and cinnamon. Roll balls in sugar mixture.

Place on baking sheet, criss-cross with fork. Place 2 inches apart on ungreased baking sheet.

Bake at 400°F for 8 to 10 minutes. Remove immediately from baking sheet.

Variations: You may omit cinnamon and use 2 teaspoons lemon rind in batter, roll in sugar and bake.

This is very bland. Needs butter and something else for flavor. After first batch in oven, tried to add flavor, gave up and threw out. cookies takes like bland bread.

Sorry to hear that. Cookie dough is nearly always salvageable unless overbaked. If too dry, add shortening or milk, if dough is too sticky, add a little flour. If dough is bland, add more flavorings; vanilla, lemon rind, spices such as cinnamon, nutmeg, allspice, mace, cloves, ginger, etc. Liqueurs such as brandy, rum, kahlua, anisette, amaretto, strega, etc. The additions you can add to punch up the flavor are endless.

Just out of curiosity, did you use all of the flavorings called for in the recipe or did you omit some of them? A recipe with 2 tsp. vanilla and 2 tsp. lemon rind in only 2 cups of flour wouldn't be bland unless your vanilla was a few years old and you didn't use fresh lemon rind. Maybe it's time to toss out the old spices!

These came out great! I didn't use the lemon rind, just the cinnamon, and they were delicious! I like to experiment so I made another batch, and added 1/2 tsp. of nutmeg to the flour blend; they came out great too! :) Happy baking!

Cookies are absolutely delicious, i've been craving snickerdoodles for a couple of weeks and finally had the time to bake up a batch! I really enjoyed not using butter for this recipe, the oil was enough moisture to allow the cookies to spread as they baked beautifully without losing their shape!! The taste is delicious as well, aiding another 1 t. of baking powder aided in making the cookies light! Delicious, thx again!

These were wonderful! Usually, I'm not much of a snickerdoodle fan, but I loved these! I'm glad that this recipe didn't have cream of tartar of butter, as that's exactly what I was looking for. However, when put for 8 minutes, the cookies came out very flat and slightly burnt on the edges. I found that 6 minutes was enough time for a tray of cookies. Thanks for the recipe!

I'm not generally a fan of snickerdoodles. But, I decided to try making them for the first time this holiday season. I was out of lemon, but loved the idea of citrus to brighten it up, so I zested an orange. I was a little worried about the batter as it did not roll very easily without sticking. But, the final product was delicious!

I had to add additional flour for the dough to be rolled. I sprinkled some additional cinnamon/sugar on them before baking and they taste great.

The new family favorite! Anytime we want cookies we bake these. SOOOO TASTY! We are a family who loves cinnamon, so we add cinnamon to the dough as well as rolling them in cinnamon sugar. We've made them for all our family and friends, and taken them to birthday and christmas parties. Always leave with an empty container.

My husband and I are lucky enough to live near an Amish market. We happened upon CINNAMON mini chips like chocolate mini chips only CINNAMON when we were there today. I added those to this recipe changing nothing else and they are fantastic.

This recipe was really good. I'm in my second tri with my third baby and I was craving this cookie. It totally hit the spot. For those who needed to add flour to roll the dough try purchasing a cookie scooper. If you can get the dough into the sugar you don't need to add any flour :)

Thank you so much for this recipe! My husband loves snickerdoodles, but my 2 year old is allergic to cinnamon. I agree that you should use a cookie dough scoop instead of rolling by hand. The dough is sticky, but so worth it. We love these cookies!
