SPICE ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. coarsely shredded zucchini
1 (15 oz.) can drained pineapple
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped walnuts
1 c. raisins

Beat eggs, add oil, sugar, and vanilla. Beat until thick and foamy. Stir in zucchini and pineapple. In a separate bowl combine flour, soda, salt, baking powder, cinnamon, nutmeg, walnuts and raisins. Gently stir into zucchini mixture. Divide into loaf pans filling 3/4 full. Bake at 350 degrees 1 hour. 3 loaves.
